Cheesy Egg & Veggie Casserole
This is a delightful recipe for adults and children to enjoy on a cold Christmas morning. Gather the following ingredients for an explosion of flavor.
- Red or Spanish large opinion, chopped.
- 1 garlic clove.
- Peeled and chopped zucchini.
- 1/2 of chopped mushrooms.
- 1/2 cup green peppers.
- 1/2 cup flour (wheat or white, is based on personal preference).
- 8 eggs beaten.
- 3 cups mixed shredded cheeses (have fun with mozzarella, American, swiss, etc.)
- 1 teaspoon baking powder.
- Salt to taste.
Brown the onion and garlic in a sprinkling of olive oil. Toss in the vegetables and allow to heat, toss in the flour, baking powder and salt to taste. Mix the eggs with the various cheeses. In a greased baking dish, transfer the veggie mix and pour the egg mixture over it. Cook for about 30 to 40 minutes on 350.
Pecan Pancakes with an Apple Topping
This delicious mix will have the family demanding for more. This is a delicious and belly satisfying meal that is incredible to share on Christmas morning. The ingredients are simple and may be available in the cupboards and fridge.
- Three large apples, cored, peeled and diced.
- 2 cups brown sugar.
- 1 cup butter.
- 1 1/5 cups of flour.
- 1 teaspoon of baking powder
- 1/2 teaspoonsalt
- 2 cups milk (Vitamin D works best, but any is fine).
- 2 eggs
- 1/2 cup melted butter.
- 1 1/3 cup chopped pecans (toasted tastes best).
For the pancakes: combine flour, baking soda, salt, eggs, milk, 1/2 cup melted butter in a large bowl. Whisk until combined, the batter will remain lumpy. Add in pecans and stir in. Make pancakes at any size until batter is depleted.
For the apple topping: baking a saucepan to medium heat. Toss in 1 cup of butter, as that melts, toss in 2 cups of brown sugar and stir until mixed. Toss in diced apples and stir, continue cooking on medium heat for 10 minutes as the apples soften.
Once the pancakes are plated, scoop up the apple topping and place atop of the pancakes. Syrup is optional. This filling treat is both delicious and addictive.
The Meat Lovers Hashbrown Casserole
This is a tempting and delicious treat for the meat lovers at home. Designed to keep one’s belly insulated, this delightful meal is far from fat-free. Gather round the meat lovers for this sultry dish.
- 5 cups shredded hashbrowns (frozen works) or 3 large potatoes sliced thin.
- 1 pound breakfast sausage cooked and crumbled.
- 1 cup ham diced
- 10 slices of bacon, cooked to crisp – then crumble.
- 1 green pepper, diced.
- 1 small onion.
- 1 cup shredded cheddar cheese (or any selection, based on taste).
- 6 eggs beaten.
- 1/2 cup milk (thicker is better).
- 1/2 cup sour cream (full fat is better).
- Seasonings to taste.
Brown the onions and meat in a saucepan, toss in green pepper. In a greased baking pan, add in the meat mix, layer the potatoes atop of it. Mix the eggs, milk, sour scream and seasonings together. Once mixed, pour atop of potatoes. Cook the mix for about 40 minutes at 350. Remove from oven and sprinkle cheese over the delightful mix. Put back in oven and cook until cheese is thoroughly melted.
